What I Ate Wednesday – March 8, 2016

Lunch - salad

My little Burrito has been under the weather for the past few days and today, he FINALLY felt much better. This means his appetite was back and I wanted to make sure he had a protein-packed breakfast. Scrambled eggs are easy and perfect for the whole family. First, I chopped up some zucchini and sauteed it with garlic. Once they cooked for a little while, I tossed in 5 beaten eggs (with a splash of milk for fluffiness!). The hubby and I had whole grain toast with a little bit of wild blueberry jam (I put an extra half slice on each of our plates knowing that the kiddo would want it if it was on our plate…).

The eggs held me over for quite a while, but I still needed a good snack before heading out for a quick run. So, I went for my go-to…a bowl of cereal. It’s carbs with a bit of protein and I know my body handles it well on runs (as long as I allow at least an hour for digestion).

After a quick 3.5 miles on a 65 degree day (YAY!), I was hungry but wanted something refreshing as well. I was originally going to have leftovers, but realized there was less than 1/2 a cup of leftover chili. So, I ate that while waiting for my veggie burger to cook in the toaster oven. I sliced the burger (I LOVE Hilary’s veg burgers) on top of a bed of mixed greens, carrots, and walnuts with a drizzle of balsamic vinaigrette. I typically make my own dressing, but just opted for what was in the fridge today.

Since lunch ended up being late (around 2:45pm), I didn’t really need an afternoon snack. Though I did eat a little bit of pear while feeding Burrito dinner. He ended up eating his half of the pear plus half of mine…

I was THIS close to calling for takeout (because I was feeling a little lazy after putting the kiddo to bed). But, since my hubby had come home at a decent hour, we cooked together. I love being able to make meals together. It’s so much more fun to have a su chef 😉 Our tofu stir-fry with loads of veggies and a bit of brown rice (left over from takeout last week – we always put one container in the fridge and usually don’t even finish the one that we do use…perfect for other meals and I don’t have to wait for it to cook!).

I’d like to say that I just had one of these small chocolate pieces for a sweet treat after dinner, but I had three. Though, if I were breaking it from a big bar, I’d likely have had even more. So, these portion-controlled pieces are still better for me and my hubby.
