What I Ate Wednesday – February 23, 2016

Lunch - Kale Salad and Buffalo Salad

With a work luncheon and a special dinner date, I knew today would mean eating out for two meals, so I made sure we enjoyed a homemade breakfast in the morning. Basically, whenever I have a super ripe banana, I make these cottage cheese pancakes and switch up the fixin’s based on what I have in the fridge. You can’t see them in the picture, but the blueberries are there, I promise!

For part of Burrito’s lunch, I cut up a super sweet juicy mango and I couldn’t help but suck the remaining flesh off the pit. I can’t believe I gave the other half to my hubby for lunch (I’m nice like that) because this was SUCH a good mango. Must. Buy. More.

For lunch today, I attended a luncheon hosted by the Distilled Spirits Council. Kathleen Zelman (the director of nutrition for WebMD) spoke about the latest information on alcohol and the new Dietary Guidelines for Americans. (Spoiler alert – it says to drink in moderation, which means 1 drink/day for women and 2 drinks/day for men). It was super interesting and lunch was provided (yay!).

I should mention that lunch was served family-style and this plate was super small (like the size of a DVD small). First up was a kale salad with pear, golden raisins, pumpkin seeds, quinoa, and pecorino nero; and buffalo cucumbers with watermelon, mint, and poppy seeds (this was sooooo good – you would never think to use buffalo sauce in a dressing for a salad, but it’s AMAZING – i’m going to recreate it ASAP).

Next was a chopped Italian salad with olives, red peppers, shallot, scallion, and tomatoes.

This sandwich was actually really small, but delicious. It has avocado, broccoli, red onion and zucchini.

Then, salt and pepper broccoli with a drizzle of ranch dressing; and brussels sprouts with relish and honey vinegar. You’ll notice that I actually didn’t have any alcohol with my meal (even though it was provided). Drinking at lunch just isn’t my thing and I knew we had a special occasion dinner coming up later so I saved my 1 drink/day for later 😉

Totally hungry in the afternoon so had an apple with a spoon of natural peanut butter.

As for dinner…

February 23rd marks the day that my hubby and I started dating in college. That means we’ve been together for 10 YEARS! That’s a frickin’ decade people! Why is that important? Well…we totally splurged on a 4-course dinner at Daniel. It was absolutely delicious – totally rich and decadent. And…I made a conscious decision not to take pictures of all the food and just enjoy every bite. Like I said, there’s a time and a place for technology and this was NOT one of them. Sorry!
