What I Ate Wednesday – February 16 2016

Breakfast - Smoothie

After being on vacation for a whole week (where we stayed at a boutique hotel on a cocoa estate – yes, you read that right!) and eating dessert EVERY SINGLE day, I’ve been trying to cut back on the “extras” and pay extra attention to my choices.

So, today started with a Green Blender smoothie and…it wasn’t their best recipe (sorry guys!). I chugged it down because I’m trying to make sure my toddler doesn’t think I’m a short order cook (which means if I don’t like what’s being served — and he’s watching — I can’t just go get something else either). The smoothie was a blend of apple, avocado, lemon juice, apple cider vinegar, collard greens, and cloves. Funny thing was that Burrito enjoyed his breakfast – though, to be fair, I made his a smoothie bowl with raisins and cheerios in it…next time, I’ll do that for myself as well!

Breakfast was certainly not satisfying, but I got caught up in the hustle and bustle of the morning and didn’t get to grab something else until after the kiddo was dropped off at the nanny’s. Timing ended up working perfectly since I had signed up for a hot yoga class and this served as a good pre-workout meal. I love toasting whole grain bread and then smearing all natural peanut butter on it, then slicing a ripe banana and sprinkling it with cinnamon. I enjoyed my PB& Banana toast with a glass of Skim Plus milk.

After an hour of hot yoga, I was pretty hungry, so I heated up some leftover pasta in the fridge. This one was beet linguine with swiss chard, topped with parmesan and chopped walnuts.

Instead of going for my usual bite of chocolate post-lunch, I opted for a hot black tea with a touch of orange zest and a splash of unsweetened vanilla almond milk. A hot drink was exactly what I needed on a really gross and rainy day.

Later in the afternoon, I grabbed a handful of peanuts and some raisins. Burrito did steal some of my raisins…the little bugger!

For dinner, I whipped up a Green Chef meal. I had a coupon, so decided to give it a shot. This meal was certainly delicious: paprika-dusted cod with orange-braised fennel and herbed white beans. It was enough for both my husband and I, plus some leftovers of the fennel and beans for a meal for the kiddo tomorrow. Sweet!

Okay…I said I was cutting back on the indulgences, not giving them up completely! My intention was to split this chocolate bar with the hubby (like we usually do), but he ended up on a conference call and I couldn’t resist half a chocolate bar starring me in the face. I’m human!
