Nutty Dates

Ok. So, this isn’t so much a recipe as it is a simple assembly. Pitted dates are perfect little packages ready to be stuffed with all sorts of goodies. Personally, I like to balance out the naturally sweet and chewy date with a bit of savory and crunchy nuts – almonds and walnuts fit well, so I opt for them, but you can easily use any nuts or seeds you have on hand.

Dates are excellent sources of fiber with a medjool date providing about 1.5 grams EACH. That means they’ll help you feel fuller longer and can help keep you, well, “regular.” 😉 Plus, they are naturally sweet so you don’t need to bother with added sugar. And they contain important minerals like magnesium and potassium.

As for nuts, the benefits are endless – they are a great source of heart-healthy fats, plus protein and fiber. Although they all contain tons of vitamins and minerals, I’ll just point out that almonds provide vitamin E – a powerful antioxidant – and walnuts are a vegetarian source of omega-3 fatty acids.

Feel free to stuff as many as you need to and keep them stocked in your purse, back pack, desk drawer – wherever!- for a quick and satisfying snack. You only need a couple of them for an energy boost or an easy post-workout snack.


5 Medjool dates, pitted

5 almonds

5 walnut quarters (simply break walnut halves)


Stuff each pitted date with an almond and piece of walnut. Enjoy!
