Strawberry-Mango Pudding with Chia Seeds

With my Indian ancestry, mangos are kind of a big deal in my family. We literally buy mangos by the boxful and go through them pretty quickly. Whether it’s simply dicing and eating, smashing into “russo”, sprinkling with cayenne pepper and lime, or blending into a mango lassi, we LOVE our mango. That’s why I wasn’t the least bit surprised when my baby boy liked anything with mango in it. Although he’ll eat it straight up, I like to give his palate some fun combos and for him to experience different textures. Typically, I make this pudding with just mango, coconut milk, and chia seeds, but I decided to mix things up by adding bright red, sweet, gorgeous strawberries. Obviously, combining two of his favorite fruits was a big hit.┬áNot to mention, my hubby and I loved it too. It makes a cool afternoon snack or a simple dessert for the whole family. Feel free to make a bigger batch and freeze some for future thawing and eating!

Strawberry-Mango Pudding with Chia Seeds

Yield: About 2 cups

Serving Size: 1/2 cup

Strawberry-Mango Pudding with Chia Seeds

Ingredients

  • 1 ripe mango, peeled and roughly chopped
  • 10 medium-sized strawberries, stemmed and roughly chopped
  • 1/4 cup lite coconut milk
  • 1 tablespoon chia seeds

Instructions

  1. Add all ingredients to a blender and blend until well combined - about 30 seconds.
  2. Pour into a container and refrigerate for at least 30 minutes.
  3. Split into 4 serving dishes and enjoy chilled.
