What I Ate Wednesday – June 15, 2016

It’s been a while since I’ve done a “What I Ate Wednesday” post. What can I say? Sometimes things get super busy and I forget what day it is! I’m sure you can relate to those types of brain-farts…

Anyways, this morning started off with Real Mom Nutrition’s Wild Blueberry & Kefir Smoothie. We now make this smoothie at least twice a week. The whole family loves it and it’s super simple to make and loaded with nutrition. Plus,Β it uses kefir which is packed with probiotics. I’m embarrassed to say that I knew about kefir for quite a while but didn’t work up the courage to actually try it until I saw this recipe. Turns out, I absolutely love it – it’s basically drinkable yogurt, so what’s not to love? Oh…I have a wall of sticky notes with recipes on them for quick reference and this recipe is one of the few that are up there. Though…honestly, I’ve memorized it so maybe I can take the sticky note down πŸ˜‰

Breakfast - Wild Blueberry Smoothie

I worked out with my trainer later this morning. (By the way, Jessica is amazing! If you live in New York, and are looking for a trainer, definitely check her out). It was a tough workout with lots of weight training so I mixed up a protein shake afterward. I’m typically not a protein-shake kinda gal, but I had samples of Zumba Shake Shake Shake and decided to give it a shot. Plus, I was feeling lazy and wanted to drink my post-workout snack instead of using a spoon. You’ll notice the photo is a little fuzzy…that’s because my arms were quivering from the workout. That’s how awesome my workout was!

Last night, my hubby and I ordered thai food for dinner. It happened to be one of those days where I had a plan to make dinner and I forgot to thaw the salmon early enough. Plus, I’ve had a bit of a cold for the past couple of days and I really wanted something super spicy to help clear out my sinuses (hey! It works!). Eating an entire order of green curry always makes me feel super stuffed, so I’ve gotten in the habit of only putting half the container in my plate with a half container of brown rice and then immediately putting the rest in the refrigerator (out of sight, out of mind…and less tempting to wolf down the whole shebang). Plus…it means I don’t have to make lunch the next day. Yay! I always get my green curry with EXTRA vegetables and some kind of protein – usually tofu, shrimp, or mock duck. Yesterday, I was feeling the mock duck. Hidden under this mound of goodness is some brown rice πŸ™‚

I’ll admit that I really really really wanted a soft serve ice cream cone today. I popped my kiddo in his stroller and walked over where the ice cream truck usually is in the park and it wasn’t there πŸ™ This ended up being a blessing in disguise because I honestly wasn’t hungry at all…I just wanted something cold and sweet. Playing with Burrito made me forget all about the craving – funny how that works!

Since my hubby was at a work event in the evening, it was just me for dinner. That means I had BFD – Breakfast For Dinner! What originally was meant to be a spinach and cheese omelet, turned out to be scrambled eggs with spinach and cheese – I’m not the best at flipping omelets, but luckily, eggs are pretty forgiving. Served up avocado toast (on whole grain bread) with thai chili spiced peanuts along with my eggs and my tummy was pretty happy.

And since I’m trying really hard not to go crazy with the desserts and my hubby and I had gelato yesterday, I decided to go with a simple and super tasty bowl of cherries for my dessert. Yum! Yum!
