There is a small café down the street where I like to take my laptop, order a latte, and get some work done. Working from home, it gives me encouragement to change out of my PJs and be around other people – some days that makes all the difference. Sometimes, when I’m being super productive, I order lunch there as well. While there are so many delicious items on the menu, there is one salad that completely rocks my world. It is so simple, but also very flavorful. The salad combines peppery arugula with sweet grapes, salty feta, and tasty chickpeas. But, what makes it absolutely incredible, is the dressing – it’s creamy with a hint of sweetness and just a touch of tang.

I decided to recreate this salad at home so I could enjoy it on days when I decide to work in the comfort of my own sweatpants. Plus, it saves me about 7 bucks. Score! The first time I made the dressing, I just kept playing around with whole milk yogurt, apple cider vinegar, and honey – adding and tasting as I went. It’s surprisingly easy to make your own salad dressings at home and once you start, you’ll likely never go back to store-bought varieties. Once the dressing is done, the rest is just about prepping a few simple ingredients. And before you know it, you have the makings of a super easy and totally delicious lunch. Arugula Salad with Chickpeas, Feta and Grapes with Creamy Honey-Yogurt Dressing

Ingredients

  • DRESSING:
  • 1/4 cup plain whole milk yogurt
  • 1/4 cup apple cider vinegar
  • 2 teaspoons honey
  • salt and pepper, to taste
  • SALAD:
  • 2 big handfuls arugula
  • 10 grapes, halved
  • 1/2 cup cooked chickpeas, (drained and rinsed from a can)
  • 1 oz feta cheese
  • 2 tablespoons charred red onion (optional)
  • 2 tablespoons Honey-Yogurt dressing

Instructions

  1. In a small bowl, combine yogurt, apple cider vinegar, honey, and salt and pepper. Mix until well combined. Use 2 tablespoons per serving of salad. Store remainder in an air-tight container in refrigerator for up to one week.
  2. Add arugula, grapes, chickpeas, feta cheese, and red onion to a bowl. Drizzle with salad dressing.
  3. Enjoy!
